How To Make Delicious Egusi Soup

Egusi is a West African name for the seeds of plants like gourds, melons and squash. Such that when dried and grounded it becomes a staple ingredient in many West African dishes. Particularly, in Nigerian Culture egusi is popular with akpu (white cassava ) and cassava is rich in carbohydrate. They add essential nutrients into West African cusine with this small introduction lets know how to prepare delicious okro soup.

Most Nigerian men take Egusi soup to be their favorite dish especially when it is well prepared. Many of the Nigerian men have taken the bull by the horn inside of the kitchen to learn how to prepare this delicious soup.

Ingredients on how to make delicious egusi soup

  •  Cow meat
  • Periwinkle
  •  Stock fish
  • Onions
  • Fresh Pepper
  • Salt
  •  Curry
  •  Water
  • maggi
  • egusi
  • ponmo
  • ugu leaves

Method Of Preparation

  • wash and grind your pepper, crayfish
  • wash the meat, ponmo and stockfish. Put in a clean pot, add the seasonings, add small onion cover the pot. Place on fire and leave it to steamer for about 5 minutes. Open the lid of the pot, add a generous amount of water and allow it to cook until the meat is soft. By then you should have your meat stock ready (meat water)
  • Wash your vegetable leaf and slice it for mine I love to use ugu leaf. according to our fore fathers that normally drink the water from ugu leaf they assumed that it gives blood.
  • Dice your onion I love my onion sliced in my okro soup

Method one of how i prepare egusi

Place a clean pot on fire allow it to heat. Pour in your red oil add a pinch of salt, add your onion leave for 1min then add the grounded egusi. keep stirring don’t allow it to burn just make sure it is well fried and mixed with the red oil/onion.

At this point, add in your meat stock water turn the mixture and cover your pot let it boil for 5 min, after open the lid pour in then meat, sprinkle the maggi cubes into the pot, add your grounded pepper, crayfish add small amount of water cover the pot and let it cook.

Open the pot add the sliced vegetable leaf (ugu leaf) and let it cook taste and check for salt or any additional ingredient. Bring it down from heat and your delicious egusi soup is ready to be served with akpu, pounded yam or eba any one of your choice

Method two of how i prepare egusi

Get a clean bowl pour in your grounded egusi. Add your onion pour in your red oil and use a spoon to mix it very well. Ensure the egusi is well coated with the oil. Place your meat stock water on fire add the meat then pour in the egusi mixture and stiir it. add little water, cover the pot let it boil for 5min open the pot add in your pepper, seasoning cubes, crayfish, and a pinch of salt.

Cover and let it cook for a while. Open the lid add in the sliced vegetable (ugu) leave to cook for 5min taste and check for salt or any additional ingredient. Bring it down from heat and your delicious egusi soup is ready. To be served with akpu, pounded yam or eba any one of your choice.

You can pick any one of your choice after trying out the both recipes because two of them are good I use them at intervals, select the one you feel is convenient for you and go ahead to prepare it either for yourself or family
