Okpa is best eaten hot and in this my recipe I am going to outline how to prepare nigerian hot okpa with 4 ingredient (okpa di oku). You have not tasted okpa until you taste okpa ndi enugu (okpa produced in enugu state). Depending on what is available at hand, you can wrap okpa using fresh banana or plantain leaf, nylon bag, plastic plates/bowl etc, The leaves are preferable because it gives a certain taste to the okpa, others might decline because the colour of the leaves penetrates into the okpa, which reduces the yellowish colour. More so, few people prefer to use both nylon and leaves so that they do not lose the leaves taste and you can retain the colour. check out my delicious okro soup recipe
- 3 cups Okpa seed (Bambara nuts)
- 10 tablespoon Red oil
- Fresh pepper
- Warm water
- Uziza leaf
- Boiled egg

ake Bambara nut to a miller for grinding, grind until it is smooth and powdered. Add your oil into the powder and. Use your hand to mix it till the colour changes from white to yellow
Add warm water into it very little and use your hand to mix it. Ensure that it stretches out like a dough. Pour in additional water this time increase it so the dough becomes watery to get that soft hot okpa.
Add grounded fresh pepper, add salt, add your pounded uziza seed. Then use a spoon to mix it well. Get your nylon or leaf for wrapping the opka and wrap them up one by one. At this point, you can put in your boiled egg in each wrap
Put water on heat and place each wrap okpa in it cover pot. Let it boil for 45 min open and check to see if its ready. Serve okpa with hot pap or custard or you can eat okpa alone as a snack. HOW TO PREPARE NIGERIAN HOT OKPA WITH 4 INGREDIENTS
Method 2 of HOW TO PREPARE NIGERIAN HOT OKPA WITH 4 INGREDIENTS
Take Bambara nut to a miller for grinding, grind until it is smooth and powdered. get a bowl add warm water, add in the red oil and leave it for 5min
Pour in your okpa flour into the oil and mix it with your hands gently, it should look like the picture below
Add in more water and keep mixing it should be watery but not too watery because too much of everything is bad. Next add in the rest of your ingredients pepper, salt, uziza leaf then use a spoon to stir it properly.
Put water on heat and place each wrapped okpa in it cover pot and let it boil for 45 min open and check to see if its ready, you can serve okpa with hot pap or custard or you can eat okpa alone as a snack.
